LOW-FAT NEW YORK CHEESECAKE
INGREDIENTS
Base- 8-10 digestive biscuits
- 1 handful of hazelnuts
- 50g butter (or EVOO or coconut oil)
- 3 XL eggs
- vanilla essence
- 125g Greek yogurt
- 150g Eatlean spreadable cheese
- 200g low-fat cream cheese
- Homemade strawberry and raspberry jam
- Raspberries
STEP BY STEP
- Crush the biscuits and hazelnuts and mix them with the melted butter.
- Place the mixture for the base and set aside.
- Combine all the filling ingredients and blend.
- Pour over the base and bake for 40/50 min at 160º
- Insert a skewer to check the consistency; if it doesn't come out clean, leave for another 5/10 min.
- Let it cool and enjoy this fabulous low-fat New York cheesecake.
