
SALMON CANNELLONI
INGREDIENTS
- 2 Leeks
- 400g fresh salmon fillets
- 1 Tablespoon oat flour
- 200ml plant-based drink
- 2 Tablespoons Eatlean spreadable cheese
- Pink salt
- Pepper
- Extra virgin olive oil

STEP BY STEP
- Cook the salmon for a couple of minutes.
- Soak the pre-cooked cannelloni sheets in hot water.
- Clean 2 leeks and chop them finely.
- Remove the salmon and drain it.
- Sauté the leek with a good drizzle of extra virgin olive oil.
- Season with salt and pepper.
- Remove the skin and bones from the salmon and flake it.
- When the leek starts to brown, add the salmon.
- Add the oat flour, plant-based drink, and spreadable cheese.
- Fill the cannelloni and place them in an oven-safe dish.
- Cover with more spreadable cheese and tasty cheese.
- Cover and bake for 15 minutes at about 160 degrees.
